Crock pot rice pudding

 For some reason I have an over abundance of long grain rice and I don't care for rice. But I do love rice pudding so I put this recipe together and made it last night. MMmmmm, good.

3 cups of milk, preferably whole or at least 2%

3/4 cup uncooked rice

1/2 cup granulated sugar

a pinch of salt

1 tsp vanilla

1/2 tsp cinnamon

3/4 cup of raisins or more if you like.


Mix together in greased crock pot. Stir well twice to make sure rice is not stuck to the bottom Cook on high for 2 to 2.5 hours or until rice is tender and the pudding has thickened. It will thicken up more as it cools too.

Cool and store covered in fridge.

Air fryer chicken wings



 Using the KFC seasoning, listed on this blog, roll in egg, then the KFC flour mixture, repeating the process two times then spritz with oil NOT PAM or the like. Bake in preheated 380º air fryer for 21 minutes turning halfway through. Check internal temperature to make sure it is at least 165º.

The results are crispy, flavorful wings to enjoy with way less calories than frying. I'm not a fan of chicken unless it is deep fried or broasted, but I really enjoy chicken done this way and not eating so many calories.

*** I only use/measure the amount of seasoned flour for what I may need to the amount of chicken I prepare. The rest of the seasoned flour is stored in the freezer for later use.

KFC Seasoning

 

  • KFC SEASONING.
  • 2 cups all-purpose flour
    2/3 tablespoon salt
    1/2 tablespoon dried thyme leaves
    1/2 tablespoon dried basil leaves
    1/3 tablespoon dried oregano leaves
    1 tablespoon celery salt
    1 tablespoon ground black pepper
    1 tablespoon dried mustard
    3 tablespoons paprika , (original recipe calls for 4 tablespoons)
    2 tablespoons garlic salt
    1 tablespoon ground ginger
    2.5 tablespoons ground white pepper
    1 cup buttermilk
    1 large egg
    1 chicken , cut into 10 pieces (2 wings, 2 legs, 2 thighs and 2 breasts each cut in half to make 4 breast pieces)


Instructions

  • Add the spices to a small food processor until they’re all uniform in size and the thyme, basil and oregano aren’t larger in size anymore.
  • Add the flour in a bowl with all the herbs and spices and mix with a whisk.
  • In a second larger bowl add the buttermilk and egg together and whisk until combined.
  • Add the chicken to the buttermilk mixture for 20-30 minutes.
  • Remove chicken from the buttermilk soak and let any excess buttermilk drip off.
  • Dredge the chicken pieces in the flour mixture on all sides, 4 times, then gently shake off the excess coating. Let sit for 10 minutes before frying.

Air Fry 380º, preheat for 8 minutes, bake for 20 minutes, turn half way through. spritz with oil, NOT PAM, before baking.

 

Or pan or deep fry in oil for 20 minutes or until done.
